Roberto Estrada, the star of the Whole Enchilada Fiesta, will be recognized at the Sept. 23 regular meeting of the Doña Ana County Board of Commissioners for his work to promote Las Cruces, as well as for his many years of civic contributions to Doña Ana County.

The Board of County Commissioners will proclaim Sept. 26-28 “Roberto Estrada Days” in Doña Ana County. The dates coincide with the 23rd Annual Whole Enchilada Fiesta, the culmination of which will occur at 10 a.m. Sunday, Sept. 28, when Estrada will recreate the world’s largest red enchilada near the steps of City Hall.

The 2003 Whole Enchilada Fiesta’s opening ceremonies will take place at 6 p.m. Friday, Sept. 26 with brief remarks from county and city leaders, as well as Whole Enchilada Committee President Gary Perez. Perez also is the Doña Ana County Assessor.

The 2003 Whole Enchilada Fiesta will feature 29 bands and entertainers on two stages. The main stage at the north end of the Downtown Mall will be open to all ages with free admittance all weekend. The Fiesta Garden at the south end of the mall will be restricted to adults over 21, because alcohol will be served.
